Golden Semolina Zucchini-Tomato Bread

Shredded zucchini adds a nice touch to savory yeast bread.

Continuing on my quest to use up the zucchini before it takes over the whole garden, I devised this beautiful Mediterranean inspired bread yesterday. It combines golden semolina flour, sweet and tangy dried tomatoes, shredded zucchini and salty Parmesan in a soft, moist loaf.
