Even though I write it, I find myself searching this site over and over, looking for a particular zucchini recipe. Therefore, I thought it would be a good time to put them all in one post. Although the zucchini crop is verrrrrry late this year, I do have several specimens in the garden, crying out for harvest.
I do love zucchini and eat it all year long, but especially during the garden season. It is added to weeknight stir-fries, steamed with corn and edamame and topped with cheese as a side dish, and sliced for homemade pizza.
Most of these recipes are from this SeedtoPantry site, but some are from my neglected Hestia’s Kitchen site too.
