National Welsh Rarebit Day

Serves: 4 servings
- 1½ cups shredded Cheddar cheese
- ¾ cup milk
- 1 tsp dry mustard
- dash cayenne
- salt and pepper
- 1 well-beaten egg
- Paprika (optional)
- Heat cheese and milk in a medium saucepan over low heat, stirring constantly until cheese melts and sauce is nearly smooth.
- Add mustard, cayenne, and salt and pepper to taste. Stir into cheese mixture.
- Add 1 cup of cheese mixture into the egg, stirring quickly or using a whisk to combine.
- Return egg mixture to saucepan. Cook and stir over medium-low heat until mixture thickens and is bubbly.
- Serve over toast points.
- Sprinkle with paprika if desired.
