Best Meyer Lemon Marmalade Recipe (with Honey)

A little sweet... a little tart.... Meyer Lemons are just right for marmalade.
Recipe type: Sweet Spreads
Serves: 4 - ½ pint jars
  • 1 lb Meyer Lemons
  • 2⅔ cups water
  • 1⅓ cup granulated sugar
  • 1⅓ cup honey
  1. Wash lemons. Trim ends.
  2. Cut lemons into wedges and then thinly slice wedges crosswise.
  3. Combine lemon slices and water. Let sit 8 hours or overnight.
  4. Add sugar and honey to lemon mixture.
  5. Slowly bring mixture to a boil, stirring occasionally.
  6. Cook rapidly until mixture reaches the gelling point, about 220 degrees. This will take approx. 25 minutes.
  7. Spoon marmalade into clean, ½ pint jars. Top with two-piece caps.
  8. Process in a water bath canner for 10 minutes.
